Then by all means turn on MTV or your radio and listen.
There are a couple of pieces of gear that many hip hop and R&B producers
use. Any magazine like Keyboard or Electronic Musician can clue you in to
what the big guys like Dr. Dre, and Timbaland are using.
Also working with loops are key. Most of the hip hop guys use loops
exclusively along with very very sparse keyboard parts.
R&B goes a lot deeper. The thing to do to learn something about the chord
and song structure of R&B is to listen to a lot of contemporary gospel
music. That's the model for a lot of new R&B songs. Gospel musicians use
chord changes in a very specific way that you'll often hear in R&B. If
you've never listened to African American Gospel music you have a lot of
homework to do. Learn the songs, write down the chord changes. There's a
lot of chord substitutions and relationships between the tonic chord and
it's relative major or minor that just isn't used in "White" pop. Really
try to learn the style.
