Sandy Bell's pub (near Meadows) has a session every night from 9, earlier on weekends. Must-go while in Eb. there's sometimes a piper (uillean) there. You'll also find flyers and adverts for all sorts of celtic stuff there. Ensign Ewart pub (top of royal mile) has a smallpipes session once a week, I think Tuesdays. There will be pipers on every corner by the time you go. drop a quid in someone's box and ask him if he knows of anything in particular. Generally EB celtic music scene is either very chilled or totally cheesy. I'd go for the chill, which is mostly grapevine stuff.
